However, in my quest for a good grains cookbook I found a treasure.
Aveline Kushi, the goddess of macrobiotics, teamed with another
natural food person (Wendy Esko), wrote a book called "The Complete
Whole Grain Cookbook". WOW! So! The good news is great waffles!
Slightly modified
Corn and Rice Waffles
1 cup whole wheat pastry flour
1 cup corn meal
1/2 cup whole wheat bread flour
1 cup cooked brown rice
1/4 tsp salt
2 cups of water
I added:
Tablespoon of sugar
Heapin handful of Chilean Flame Raisins
Heapin handful of currants
Mixed it up well, cooked them on high on my waffle iron. They are
rather heavy, but crispy which I really like. I think the raisins are a
good addition. Gosh, any dried fruit would be a good addition. You
could even take it further and make it more of a dinner type thing with
whole corn, maybe some jalepenos topped with a good salsa...sounds good
to me! ;-)
