I find the texture of these pancakes totally satisfying - not at all
gummy or stange tasting! It's from Food for Life.
WHOLE WHEAT PANCAKES
1 cup whole wheat flour (I've found it needs about 11/3 cups)
1/4 t salt
1/2 t baking powder
1/4 t baking soda
11/2 c FF soy milk (you could also use rice, cow, or any other type of
"milk")
1 T maple syrup
1 T vinegar
combine the dry ingredients and add in the wet ingredients, stirring only til
lumps are removed. (wire whisk is perfect for this) cook as usual
