Carrot Tofu Brownies
1 cup shredded carrots
1 jar prune baby food
1/3 cup raspberry/strawberry butter (I picked this up at a local farmers mkt)
1/2 block mori-nu lite tofu
1/2 cup white sugar
1/2 cup brown sugar
2 cups flour (I use 1 cup whole wheat, 1 cup unbleached white)
1 1/2 tsp baking soda
1/2 tsp salt
1/3 cup cocoa powder
bake for about 25 minutes at 350 degrees. (batter is quite stiff)
