Jane's try at brownies
----------------------
The ingredient list is largely inspired by the brownie recipe in the
Baking Without Fat book. I like the idea in this book because many of
the treats feature whole wheat flour as the main ingredient, but I didn't
like how the brownie recipe turned out (not enough chocolate, too sweet,
too cakelike, etc.). So I added some stuff and took some stuff out and
now it is more to my liking.
In a large bowl sift:
1 1/2 c whole wheat flour
1/2 c unsweetened cocoa
2 packages of Better Buds
1/8 t. cinnamon
1/2 t. cream of tartar
1/4 t. baking soda
Add:
2 jars (2.5 oz. each) prune baby food puree
1 jar (2.5 oz.) unsweetened applesauce baby food
1 cup honey
1 egg substitute
1 1/2 t. vanilla
Mix until blended but don't overmix. Pour into a 8 x 11 baking pan
sprayed with non-stick spray. Bake at 325 for about 45 minutes or until
a toothpick comes out more or less clean.
(My jar of cream of tartar says that
1/2 t. cream of tartar + 1/4 t. baking soda == 1 t. baking powder
so you possibly could make this substitution if you can't find cream of
tartar. I haven't tried it though.)
