I have tried to find Pioneer nonfat baking mix here on the East Coast but
with no luck. I think it is only sold on the West Coast. It is like
Bisquick and you can make pancakes, biscuits etc with it. I won't use the
low-fat Bisquick because it still has so much fat in it. Today I found a
posting for a homemade ff version of Pioneer ff mix. I can't wait to try
it. It has been tested and works fine.
HOMEMADE FATFREE BAKING MIX
3 1/4 cups unsifted all-purpose flour
1/2 cup sugar
1 cup nonfat dry milk
1/2 cup cornstarch
1 TAB baking powder
1 tsp. baking soda
1 1/2 tsp. salt
Mix together. You will need to tightly cover and store. I would also stir
before using.
PUMPKIN RING
3 cups no-fat baking mix
1 cup sugar
1 cup packed brown sugar
1/4 cup applesauce
egg beaters equiv. to 4 eggs
1 can (16oz.) pumpkin
2 1/2 tsp. pumpkin pie spice
1/4 cup skim milk
Heat oven to 350. Spray a bunt pan with Pam. Beat all ingredients on low
speed for 30 seconds, scraping bowl constantly. Beat on medium speed 3
min. scraping bowl occasionally. Spread in pan, bake for 50 min. or until
toothpick inserted in middle comes out clean. Cool 10 min., remove from
pan and cool completely.
