Here's an easy sour cream cake I've mad a few times, and have always
enjoyed. If you don't have enough sour cream use plain yoghurt as necessary.
Sour Cream Cake serves 8
5 Tbsp applesauce
2/3 cup sugar
1 tsp vanilla
1/4 tsp salt
1 cup fat free sour cream
egg sub for 1 egg, or 2 egg whites
3/4 tsp baking soda
3/4 tsp baking powder
1 1/2 cups flour
3/4 cup raisins or dried cranberries
Combine first 5 ingredients and stir until smooth. Break up lumps in
baking powder and soda, then whisk into mixture. Stir in flour and rasins
until just combined.
Pour into a prepared loaf pan, and bake at 350F for 40-45 minutes. Cool in
the pan 10 min. before removing.
Freezes well. Delicious!
