Eggplant Casserole
1 lb eggplant cut into 1 in cubes
1 lb zucchini (ditto)
1 lb plum tomatoes (ditto)
1 onion (ditto)
2 stalks celery
1 4 oz can tomato paste
1 TBS red wine vinegar
1 TBS brown sugar (I leave this out)
1/4 c raisins
2 c cooked black beans
mix cook on low 3.5 hours or high 5 hours
add capers and black olives at end (if you'd like--I didn't). Yummy!
