good corn bread
1 1/4 cups all purpose flour
3/4 cups corn meal (I used white)
1/4 cups sugar (could be less if you like, it was very sweet)
2 tsp baking powder
1/2 tsp salt (optional, I used it)
1 cup skim milk
1/2 cup cream style corn
2 egg whites
combine dry ingredients. combine wet ingredients in a separate bowl.
put dry and wet together and stir until combined. do not over beat.
pour into prepared pan (I just used my bakers' secret pan, no oil)
and bake in a preheated 400 degree oven for 20-25 minutes (if you
stick a knife it and it comes out clean, you're done)
I used a swquare baking pan.
Microwave directions (I didn't do this, it's on the package)
mix wet, mix dry, combine until moints moistened. Pour batter into
a ungreased 9 inch pie plate or round microwaveable cake pan.
microwave on HIGH 5-6 minutes or until surface appears dry.
rotate ofter 2 minutes. Let stand 5 minutes before serving.
I also added some cayenne pepper, and it was nice. Next time
I will try replacing more of the milk with creamed corn and
adding some frozen corn kernels.
