here is my personal Best Recipe of 1999. It's easy, fast, and the best
comfort food ever.
APPLE / PEAR RICE (VEGAN)
1/2 cup uncooked brown rice
1/2 cup apple or pear juice
1/2 cup water
dash of salt (optional)
raisins to taste (i use half a handful)
1 apple or pear
a little sugar and cinnamon (optional)
Cook rice in water and juice w/salt. This might take a little longer
than usual brown rice cooking, and you might need to add some more
liquid before the rice is soft enough. About halfway through the cooking
process, add raisins. Chop fruit into small pieces, add about five
minutes before rice is cooked so it will get soft. Sprinkle with sugar
and cinnamon just before eating (hardly any sugar will be necessary, as
this is already quite sweet - so maybe just use the cinnamon).
Makes one well-sized serving for a rainy afternoon... enjoy!
