Adapted from the American Heart Association Cookbook, 5th Edition
Special Baked Apples
4 Jonathan or Macintosh apples (I used Delicious and they work ok too)
2 tsp lemon juice
6 tsp golden raisins
4 tsp brown sugar
2 tsp ground cinnamon
1/2 cup rum or sherry
Remove the core of each apple but do not cut all the way through the
apples so that the bottom of the apple remains intact. Remove 1/2 inch
of the peel at the top of the apple around the hole.
Place the apples in a baking dish and sprinkle with the lemon juice.
Fill the centers with raisins and brown sugar. Sprinkle with cinnamon.
Pour rum or sherry into bottom of the baking dish.
Bake for 30-35 minutes in preheated 350 degree oven, basting several
times during the cooking.
Can also be made in a microwave: place apples in a microwaveable dish.
Loosely cover with plastic wrap. Cook for 3 to 4.5 minutes on high.
Let stand for 3 minutes and serve.
