Baked tofu and fruit
This is a winner !!
It can be served atop cooked couscous, oatmeal, or farina for breakfast or
alone for dessert.
1/2 block mori lite silken tofu
3 Tablespoons honey ( or sweetner of choice )
3 Tablespoons orage juice
1 teaspoon cinnamon
1/4 teas salt
1 pound parsnips ( 4 cups ) peeled and cut into matchsticks
2 apples cut into 8 wedges each
1 orange or large tangerineunpeeled and sliced into 1/4 inch rounds

Preheat oven to 325. In a large bowl combine tofu, honey, and orange juice
cinnamon, and mix well to form a smooth sauce. Add parsnips, apples and
orange, salt if using and mix well to coat. Lightly spray a baking dish with
nonstick spray and transfer mixture to dish. Cover dish and bake for 30
minutes at 325-stirring twice. Uncover and bake 15 minutes longer to glaze.
