 Blueberry or Cranberry Gingerbread

 2 1/2	c	flour	
 
 1 JJJ	tsp	baking powder	
 
 1 JJJ	tsp	baking soda	
 
  1/4	tsp	salt	
 
 1 JJJ	tsp	cinnamon	
 
 2 JJJ	tsps	ginger	
 
  1/2	c	brown sugar or honey 	packed
 
 1 JJJ	tbsp	brown sugar	packed
 
  1/3	c	applesauce	at room temperature
 
 1 JJJ		egg white	whipped
 
  1/2	c	nonfat yogurt	
 
  1/4	c	molasses	
 
 2 JJJ	tbsps	molasses	
 
 1 JJJ	c	water	very hot
 
 1 JJJ	c	blueberries or cranberries	frozen
 
 
 Preheat oven at 350.  Prepare pan(s) with cooking spray and flour.  In
 a mixing bowl, combine flour, baking powder, baking soda, salt,
 cinnamon and ginger.  In another mixin g bowl, combine brown sugar,
 applesauce, egg white, yogurt, molasses and hot water.  Add dry in
 gredients with wet ingredients just until moistened. Stir in the
 blueberries or cranberries.  The batter will be thin.  Turn the batter
 into the prepared pan(s).  Bake for 35 to 45 minutes dep ending on pan
 size.

 Notes:	Baking breads at lower temp. results in crusts that are
 thicker and chewer; higher temp.  results in a thinner, crisper
 crusts.
