adapted from _Sweet and Natural_. I like this book, uses no refined
sugars, just fruit and/or juice. It does call for oils, I make the
substitutes.
Cinnamon Apple Bars
1/4 cup aple juice concentrate
1/4 cup unsweetened applesauce
1 egg equivilent non fat egg stuff
1/2 cup rolled oats
1/2 cup whole wheat flour
1 teaspoon cinnamon
1 cup chopped dried apples
1/4 cup currants or raisins
2 teaspoons carob (optional, I leave it out)
while juice is thawing, chop or scissor the dried fruit into pieces no
larger than 1/2 inch. Preheat oven 350F and oil or spray 8" square
baking pan
in small bowl, mix together applesauce, egg, juice.
In larger bowl mix oats, flour, cinnamon and carob. Stir in wet
mixture till well blended. Add fruit, turn into baking dish, use back
of spoon to pat down evenly
bake 350F for 20 minutes. Let cool before slicing. store airtight,
refrigerate.
Now, I have made these with fresh apples and with dried apricots. They
are good any way I have tried. Once, I was out of oats, so I used all
flour, (1 cup). It is pretty adaptable.
Also, I don't use a 8" square pan, it really isn't much batter, I put it
into a loaf pan.
