I wanted a crunchy cobbler topping so adapted the one from a Quaker
Oats container, and it came out great on top of peaches & blueberries
(fruit just tossed in cornstarch, because the peaches were so sweet):
FRUIT COBBLER
3/4c whole wheat flour
1/2c light brown sugar
1/3c applesauce
1c oatmeal
1/4 tsp almond extract (a nice touch, thanks to Quaker Oats)
1 1/2 tsp Egg replacer (1 egg equivalent)
Mix dry ingredients, then add applesauce & almond extract. Mix
well and put on top of fruit. I just used a glass pyrex pie plate.
Bake at 400 about 30 minutes, til golden brown.
The original recipes's fruit half is below, no added fat although it
seems a bit heavy on sugar (I haven't tried this yet) :
1/2c. corn syrup
1/3c. sugar
1 TBSP cornstarch
Heat with 1 1/2c. cranberries, bring to a boil, simmer 5 minutes or
until cranberries pop. Stir in 2 medium pears, sliced.
