here is a recipe I adapted from my pre-ff days that I hope you will
enjoy:
Fruit Squares
1/2 cup of applesauce or 1 banana
2 egg whites
2t vanilla extract
2/3 cup turbinado sugar or substitute
1 cup brown sugar
1 1/2 cups unbleached flour
1/2 cup whole wheat flour
2t baking powder
1/4 t salt
1/2 t cinnamon
2 tart apples, chopped
1/4 cup cinnamon sugar
Mash the banana, if using, and beat with egg whites, vanilla and the sugars
until smooth. Sift together the flours, baking powder, salt and cinnamon and
stir into egg white mixture (batter will be sticky). Fold in chopped apples.
Pour into a sprayed 13 x 9 x 2 pan and sprinkle liberally with cinnamon sugar.
Bake at 350 degrees for 30 minutes, or until the top springs back when lightly
touched. Cool completely in pan before cutting into 18 squares or so.
Per serving using banana (gives the recipe a baby-food-like sweetness which
kids love but adults may not): 145 calories, 3 cff, 0.3 fat grams, 0
cholesterol, 77mg sodium, 34.5 grams carb, 2 grams protein...applesauce
reduces the count to 141 calories, 0.2 grams fat, 33.4 grams carb.
