I made something called "oat creme" this week too. It is tasty, but I can't
figure out quite what to do with it! I got the recipe from "Vegetarian
Gourmet," but I altered it slightly to use less fat (I still used some,
though). Here it is:
Oat Creme:
3 cups oats
3 cups applejuice (I used: 1 c. apple, 1 c. grape, 1 c. water)
1 tablespoon tahini
2 tsp. vanilla
2 tbsp. brandy (optional; I didn't use it)
2 tablespoon honey or maple syrup (optional; I used maple syrup)
1 teaspoon cinnamon
1 cup lite soy or skim milk (I used fatfree rice milk)
All you do is bring the oats, juice and tahini to a boil, then lower heat and
simmer for at least 20 minutes. Throw in remaning ingredients and process in
food processor.
It is good plain or as a spread (I put it on banana-nut rice cakes!). In the
magazine, they call it a sauce, but it is really pretty lumpy--not the
texture to be ladled over anything.
