This is from _Secrets of Fat-Free Baking_ by Sandra Woodruff. I've made
these several times. They are quick, easy and taste pretty good!
Oatmeal Fudge Squares
1/2 cup plus 2 T. quick-cooking oats
1/4 cup unsweetened applesauce or mashed banana
1/2 cup sugar
1/3 cup cocoa powder
2 T. unbleached flour
1/4 teaspoon salt (optional)
1/4 cup honey
2 egg whites
1 teaspoon vanilla extract
Combine the oats and applesauce or banana, let sit for 5 minutes. Add
the remaining ingredients and mix well.
Spray an 8-inch square pan with nonstick cooking spray. Spread the
batter evenly in the pan and bake at 325 F for about 22 minutes, until
the edges are firm and the center is almost set.
Cool to room temperature, cut into squares and serve.
Yield: 16 servings
Per serving: 64 calories, 0.5 g fat, 1.4 g protein, 20 mg sodium, 1 g fiber
