pumpkin souffle (sort of)
I made this the other day, and it was good. I think you could do it all
pumpkin, or maybe all sweet potato. I'd like it with more spices, and I bet
it would be good with 2 big baked sweet potatoes instead of canned yams.
1 can pumpkin puree (not pie mix)
1 Big can cut yams in syrup (drained)
1 can lite evaporated skim milk (is there evap soy milk?)
1 tsp cinnamon
1/4 tsp ground cloves
1/2 tsp nutmeg
1/2 tsp allspice
1/2 tsp ground ginger
brown sugar or corn syrup to taste (optional)
mix with a hand mixer until smooth. Put into uncovered casserole or souffle
dish with deep sides. Bake at 350 degrees until beginning to brown on top
and hot all the way through. This is a great dessert, if you like things
sweet it could be a side dish.
