Fluffy Rum Frosting
1 c. + 2 Tb. dark corn syrup
3 egg whites
dash salt
1 Tb. dark rum
In saucepan,cook syrup to 240 degrees on candy thermometer or until a little
bit of the mixture, dropped in cold water, forms a soft ball. Meanwhile beat
egg yolks until frothy, add salt, and beat until stiff but not dry. Now
gradually add syrup while beating. When all the syrup has been added, add
the rum. Continue beating until mixture hands in peaks when the beater is
raised. Frosts sides & top of a 9" two layer cake.
