We have abundant apples on Long Island this year. Here's a good recipe to
use them.

Spiced Apple Crisp

4 medium McIntosh apples -- 7 oz. each
1/4 teaspoon grated orange peel
1/3 cup orange juice
1 teaspoon cinnamon
3 tablespoons dark brown sugar
1/4 cup crushed gingersnaps
Peel and core apples, Slice into 1/4-inch-thick rings and arrange in a 9
1/2-inch glass pie plate. Drizzle orange juice evenly over top. Mix orange
peel, cinnamon and sugar in a small bowl; sprinkle over apple slices. Cover
loosely with waxed paper. Microwave on High 2 minutes. Rotate dish and
microwave 1 to 2 minutes more, until apples are tender. Top with crushed
gingersnaps and serve immediately. Makes 4 servings.
