Subject: Spinach Pie
Delicious recipe that came on a promotional newsletter sent monthly by a
local printer. They attribute the recipe to Anthony Hopkins, the actor.
Spinach Pie [serves 12 as a side dish]
1 bunch spinach, washed, trimmed, chopped
1 bunch green onions, finely chopped
1/4 cup minced parsley
1 cup ff ricotta cheese
1/2 cup ff shredded cheese
4 eggs (equivalent of)
1/2 tsp dill weed
1 cup flour
1 cup water
Preheat oven to 350F. Squeeze all moisture from spinach. In your favorite
saute liquid, saute onions and parsley until onions are soft. Mix in
spinach, cheeses, equivalent of two lightly beaten eggs and dill weed.
Combine the remaining two eggs (equivalent), flour and water in a medium
bowl, and mix well to make a thin batter. Spritz an 8X12-inch baking dish
with pam and pour in half the batter spreading evenly. Top with spinach
mixture. Pour remaining batter over the spinach. Bake 45-50 minutes until
set. Serve immediately. [not as tasty as left-overs, but still enjoyable.]
