I got this from a book long ago, modifying it slightly to suit my own
taste. You can substitute ground spices for whole spices if you like.
Chai (Indian spiced tea)
4 cups liquid (use any combo of skim milk and water depending on how
rich you want it, in general 2 cups milk and 2 cups water is good)
1/4 cup nonfat dry milk (or more to add creaminess)
5 tsp sugar
3/4 tsp cardamom seeds
6 whole cloves
3/4 tsp cassia bark (or broken cinnamon stick pieces)
1/4 tsp ground ginger
pinch of black pepper (less than 1/8 tsp)
4 - 5 tea bags or 2 Tbsp loose tea
In a medium pot, combine everything except the tea. Bring
to a boil, stirring frequently and watching *very carefully*. At the
point where the milk starts to boil up, reduce the heat and simmer
for 5 minutes, stirring frequently. Remove from heat, add the tea,
cover, and steep for 2 to 5 minutes, depending on the tea.
Strain and serve. Makes 4 servings.
