Last week I had surgery on one of my salivary glands, so I needed to avoid
solid foods for several days. I found a recipe for Morning Orange Drink in
"The Best of Country Cooking 1999" and the drink is wonderful. It's a
really nice treat on a hot summer day! This would also be a great drink to
sip on during the winter while you're waiting for breakfast to finish=
cooking.
The recipe makes 4 large servings. I poured a glass and then put the
blender container in the fridge to stay cold. When I wanted another glass
of the drink, I put the blender container back on the machine, added a
couple more ice cubes, whirled the drink for a 20-30 seconds, and had a
frothy drink again.

6 oz frozen orange juice concentrate
1 cup cold water
1 cup skim milk
6 pkt Equal sweetener
1 tsp vanilla extract
10 ice cubes
Combine first five ingredients in a blender; process at high speed. Add ice
cubes, a few at a time, blending until smooth. Serve immediately.

NOTES : Original recipe called for 1/3 cup sugar. I used Equal, instead.
This is a terrific drink and is suitable to serve at breakfast or with
lunch. It also makes a great snack in the evening. Two thumbs up!
