RECIPE: Scary green stuff.
put in a wok and simmer until dried veggies are soft:
1 oz. dried wakame seaweed
1 oz. dried red bell pepper or one finely chopped small red bell pepper
about 1 oz. dried wood ear mushroom or black fungus
2 cloves garlic, grated
1" cube (approx) fresh ginger, grated.
soy sauce and mirin (sweet rice wine) to taste
2-3 c. water (as much as the stuff will absorb and then some for 'gravy')
add:
about 1 lb. spinach washed and de-stemmed or one package frozen spinach
simmer some more and season with more soy sauce, mirin, ginger, garlic, etc,
if you find it to be necessary.
When everything is soft and the stuff is approaching 'swamp thing' in
appearance, add a little water if necessary, then add 1 T. cornstarch (add
dissolved in cold water). Cook until the sauce thickens. Serve hot and
slimy over brown rice or, as we did last night, with a side of cold soba
noodles and wasabe dipping sauce. It tasted really good with lemon tamari,
but not everyone will be so lucky as to have that. (I'm not)
