Red Cabbage
1 small onion, thinly sliced
1 small head red cabbage, thinly sliced or chopped
1/4 - 1/3 cup balsamic vinegar
salt and pepper
1 tsp lemon juice
1/2 cup chopped fresh parsley
In a large non-stick pan, cook the onion over medium heat for a few minutes.
Add the cabbage and cook on medium to high heat, stirring, and adding vinegar
a little bit at a time, for a few minutes. Cover and cook over low to mediumhe
auntil the cabbage is tender-crisp. Add more vinegar as the cabbage is cooking
,
if necessary. Add salt and pepper to taste, sprinkle with lemon juice and stir
.
Pour into large serving bowl and top with parsley.
