Here is a delicious sounding recipe I adapted from one found in the
Family Circle Thai Cookbook:
Spicy steamed corn:
4 corn cobs
5cm bit of fresh ginger, grated
3 cloves garlic, chopped
1-3 tsp chopped red chiles
2 tsp green peppercorns
2 tbsp water
2 tbsp soy sauce
Remove husks and silk from the corn, cut into smalleer bits. Mix ginger
garlic, chiles, peppercorns and water.
Press the spice mixture onto the corn cobs and place in a steaming basket
lined with bannana leaves or baking paper. Place the basket over a wok or
pan of boiling water and steam for 20 mins or until the corn is tender.
Spinkle with the soy and serve.
I'm sure you could also do this in the microwave by coating the corn with
the spices and then rolling the corn in microwave safe plastic wrap (cling
wrap/glad wrap). It may also be really nice grilled!
