Re-discovered an old favourite recipe of mine on the weekend.
If you can call it a recipe... it's more like one of those dinners
you just throw together when you can't think what to cook. :)
It is THE simplest vege bake!! I usually cut it into portions
and freeze it. Makes an excellent lunch.
SIMPLEST VEGE BAKE ON EARTH
Ingredients:
Any vegetables you can grate
(I used equal quantities of potato, pumpkin, carrot and zucchini
with a little shredded spinach thrown in too)
Egg whites (enough to bind mixture together)
Garlic, pepper, herbs, etc (whatever you like)
One tomato (sliced)
Fat-free cheese or bread crumbs for topping
Method:
Grate all the veges and seasonings and mix together.
Add egg whites and mix. Press mixture firmly into baking dish.
Top with tomato slices and cheese or bread crumbs.
Bake in hot oven (200*C) for ~30 minutes.
Notes:
The amount of ingredients will vary depending on the size of
your baking dish. Two egg whites is enough to bind veges to
serve 4-6 people.
