VEGGIE MESS

One medium-size onion
A lot of mushrooms
green/red/yellow pepper(s)
zucchini
(courgette, I think)
yellow squash (crookneck, marrow?)
any other random veggies you've got lying around
basil
oregano
white pepper
a little thyme, if needed
a couple of fresh tomatoes, or canned crushed tomatoes
Chop up all the veggies except the tomatoes and put them into a non-stick
pot. Heat thoroughly until the onions, mushrooms, etc. give up their
juices (it gets pretty soggy in there). Simmer for 5 minutes or so
(I simmer until the onions are thoroughly cooked -- I hate raw onion).
Add in the tomatoes and cook for another minute or two. Add a dash of white
pepper (brings out the flavors really nicely, without being too spicy)
and add the herbs. Serve over rice, pasta, beans, or whatever else
you've got lying around the house that it would go well over (potatoes
would probably be good, too). The nice thing about this dish is that,
depending on what veggies you've got lying around, it can be totally
different every time you make it! :-)
