BULGUR WITH CELERY AND SAGE
1 small onion, chopped
2 stalks celery, chopped
3 cloves garlic, minced
1/4 cup water
1 cup bulgur
1 teaspoon dried rubbed sage
1/2 teaspoon dried thyme
1/2 teaspoon dried marjoram
1 3/4 cup vegetable stock or water
1 bay leaf
1 Tablespoon chopped parsley
salt and pepper
Cook onion, celery and garlic in 1/4 cup of water until softened.
Stir in bulgur, sage, thyme and marjoram and cook for a minute
while stirring. Stir in stock or water and bay leaf. Bring to a
boil, reduce heat and cover and simmer for 20 minutes or until
liquid is absorbed. Stir in chopped parsley, season with salt
and pepper to taste.
