Since people were discussing hummus recipes recently, I thought I'd
post my favorite. It has a different texture than the usual, but is
very flavorful. And healthy!
It uses sprouted beans rather than cooked garbanzo beans. The bag of
sprouted beans I buy in the natural foods store has a mixture:
garbanzos, lentils, and a couple other types (sorry don't have one on
hand to look at).
(Recipe from New Natives, the sprout company, Santa Cruz(?))
LIVE HUMMUS
Makes 2 cups
1 bag sprouted bean mix (1 3/4 cup)
2-3 lemons juiced
2-3 garlic cloves
1-2 Tbsp. tamari soy sauce
1/4 to 1/2 cup fresh organic carrot juice
Put all ingredients in a food processor or blender and blend until
smooth. A blender may need a little more liquid to get a smooth
texture.
My variation: instead of the carrot juice, I grate 2 whole organic
carrots in the food processor first, then add all the other
ingredients and process until smooth.
Great with whole wheat pita pockets.
