Hummus
1 can garbonzo beans, drained and rinsed (save the liquid)
lemon juice (from about 1/2 a lemon, or a couple teaspoons)
cumin (1 tsp?)
coriander (1 tsp?) I rarely measure
Drain and rinse garbonzos. Whirl in food processor with lemon juice, adding a
bit of garbonzo liquid saved from the can. Add enough liquid so it is not
grainy, and has a smooth consistency. Add spices and process a bit more. (I
don't add salt if I use the liquid from the can.)
This keeps in the refrigerator about a week. I try to have some on hand for
the hungry time when I first get home from work.
