CAULIFLOWER & PEA 'SHAAK'
The word 'shaak' means that it is a vegetable dish with little or no
sauce. It is indian in origin.
1 tsp mustard seed, 1 tsp cumin seeds
1 med Cauliflower divided into florets
1 tsp turmeric, 1/2lb frozen peas
1.5 tsps chilli powder, 2 tblsps ground coriander
1/2 tsp garam Marsala and a bunch of green coriander (cilantro) to serve
(optional)
Heat a heavy bottomed pan. Add the mustard and cumin seeds. Place the
lid on securely and wait for the seeds to finish 'popping'.
Add a little water (about 1/4 inch). Add cauliflower andturmeric. Mix well.
Turn up the heat, cover and steam the cauliflower for 5 minutes or so.
Add the peas, chilli powder and ground coriander and mix well. Turn
the heat to simmer, cover and cook until cauliflower is just tender.
Sprinkle with coriander leaves and garam marsala and serve over
wholegrain rice or any ot her grain.
