TANDOORI PASTE
5 garlic cloves
1/2 t. freshly ground pepper
1 1-inch cube peeled ginger
1/2 t. salt (optional)
1 med. onion, cut into 8 wedges
1/4 t. ground cardamom
1 c. plain lowfat yogurt [nonfat]
1/4 t. freshly grated nutmeg
3 T. fresh lemon or lime juice
1/4 t. ground cloves
1/4 t. cinnamon
2 t. ground coriander
1/4 t. cayenne pepper
1 t. ground cumin
1 t. turmeric
chopped green onion
lemon or lime wedges (for garnish)
Mince garlic in processor. Add ginger and mince. Add onion and
mince. Add next 12 ingredients and puree.
This would have to be cooked before you put it on steamed cauliflower.
I'm not sure whether you would want to saute it in a non-stick pan or
put in on the cauliflower and then put it under the broiler.
Or maybe both! Red food coloring is sometimes used too.
