Seitan Burgandy
8 ounces seitan, rinsed and cut into bite size pieces
1 large onion, sliced
6 cloves garlic, minced
1/4 pound mushrooms, sliced
2 zuchini, sliced
about 3/4 cup red wine
about 1 cup water or broth
1 teaspoon sage
1 teaspoon thyme
black pepper
about 3 tablespoons flour (I browned it in the oven while the potatoes
were baking)
baked potatoes, noodles, rice, or ???
sautee the onion and garlic in about 1/2 cup wine till wine evaporates
and veggies and quite tender
Add another 1/4 or so cup of wine and the herbs and all the other
veggies, simmer 5 minutes, add enough water/broth to make as much
sauciness as you want. Add seitan. Cover and simmer till all is tender.
Into a lidded jar, put the flour and about 1/2 cup water/broth, shake
til smooth, use this to thicken the gravy.
Serve over potato, rice, pasta ??????
