I have found (after considerable experimentation and more than a few
failures) a nice alternative to sausage, which is nice on pizza, or tufu
scramble (or egg if you prefer). If you haven't tried tempeh yet see if
you can find it at your local HFS, usually in the dairy or frozen food
case. I'll usually cut the tempeh into small 1/4" x 1/4" squares and
add it to the following mixture.
Tempeh Sausage
1 Pkg low-fat tempeh approx 8 oz.
1/2 tsp ginger (more if you like it spicy)
1 Tbs soy sauce
1 tsp sage
1 tsp rosemary
1/2 tsp garlic powder
1/4 tsp black pepper
1/2 tsp each of dried basil & oregano
1/2 cup warm water
Mix the above dry ingredients well with the water and add the cubed
tempeh, and let it stand for about 1/2 hour before using.
Tempeh can also be used for fajitas, crumbled in tacos, you name it!
If there's any more good tempeh ideas out there I'd love to hear them.
