I made these on Sunday and they were great.
CHILAQUILES
12 corn tortillas
8 oz or more of ff mozzarella or monterrey jack
1 pint ff sour cream
sliced jalapenos (ones in a jar), your choice as to how many
Soften tortillas by damping each one with water and then placing 6 in
stack; wrap with wax paper and nuke for 50 seconds. Cut them into
eighths.
In a casserole, place alternately layers of torillas, sour cream,
cheese, jalapenos slices, and sauce; I usually have a total of 3
layers. Bake at 325 deg F for about 30 min. or until bubbly.
Sauce:
1 med. onion, chopped
28 oz can of tomatoes, chopped tomatoes or put in blender a few sec.
1 tsp red chile powder
1 tsp oregano
salt
Wilt onion in water, add remainder of ingredients and simmer for 10
min.
