Title: Fakin' Fajitas

Yield: 4 servings
8 oz Seitan, cut into 3"-long Freshly ground black
pepper
Strips To taste
1 Red bell pepper, sliced 4 Fatfree tortillas
1/2 md Onion, sliced 4 T Vegetable stock
4 Garlic cloves, minced Salsa to taste
4 T Lime juice 2 T Cilantro, chopped
Combine seitan strips, garlic, lime juice and pepper in a shallow bowl.
Stir to coat, then refrigerate several hours, stirring occasionally.
Preheat oven to 200 degrees. Wrap tortillas in foil and place in oven to
warm while preparing fajitas. Heat a large heavy skillet. Add vegetable
stock and saute seitan several minutes. Add pepper and onion strips and
continue to saute until liquid has almost cooked away, about 5 minutes
total. Cover pan and cook until pan is almost dry, about 2-3 minutes.
Spoon 1/4 of seitan strips, peppers and onions down middle of each warmed
tortilla. Drizzle with salsa and sprinkle cilantro over all. Roll up
tortillas enclosing filling. Serve immediately. Serves 4.
