pepper-fajita recipe

 Southwest Pepper Fajita (receipe)
 
 Here is an excellent receipe that I cook at least once a week, especially 
 when fresh garden peppers are available.
 
 Low/no fat tortillas (warm them in a non-stick pan just before using)
 
 1/ea. Green pepper, red pepper, and yellow pepper (slice lengthwise in
   strips.
 1 bundle fresh cilantro, chopped
 1/2 cup lime juice
 1 small sweet onion
 
 Heat a non-stick pan on high - put pepper, onion, and cilantro in the pan 
 and sprinkle the lime juice over the top.   Toss all of the ingredients 
 around until just tender - if they start to wilt you've over cooked 
 them.
 
 Put all in a warm tortilla and eat.  This sounds so very basic, but the 
 combination is delicious.
 
 Note:  we sometimes add garlic, and/or jalepeno's or other types of peppers.
