I've had success with using corn tortillas (both ff and the 1g fat/shell
kind) to make tostada shells.
Preheat oven to 400o.
Place tortillas directly on oven rack laying them flat (I've lost a few this
way and had a nice crackling fire going in my oven when one hit the heating
element) or on metal cooling rack placed in oven. Bake for 5 minutes, or so,
and presto-really crispy tostada shells.
The thinner the tortilla the lighter and crispier the tostada. Also, you
really have to keep an eye on these as you bake 'em 'cause they burn real
easy.
I smear warm ff refried beans that I've seasoned with taco seasoning on the
shells and top with ff soya kaas, lettuce and salsa. Mmmmmm. Sometimes I do
dairy and add ff sour cream.
