In the Food section of our paper last week (The Columbus Dispatch) there was a
recipe called South of the Border Flip. It called for ground chuck, kidney
beans, cheddar cheese, corn, and was topped with Corn Bread.
I decided to try making it with TVP. I doubled the amount of all of the spices
since TVP is somewhat flavorless. I tasted the mixture and thought it was so
good that I stood over the stove shoveling spoonfuls into my mouth. I decided
against making the Corn Bread Mixture that was supposed to go on top of it and
just wrapped the filling in fatfree tortillas.

TVP Tacos
Serving Size : 4
Amount Measure Ingredient -- Preparation Method

2 cups tvp, dry
1 3/4 cups boiling water
1 can tomatoes, canned -- 28 oz
1 teaspoon basil
1 teaspoon oregano
1/2 teaspoon cumin
1/2 teaspoon thyme
1 teaspoon salt
pepper -- to taste
1 tablespoon chili powder
1 each onion -- diced
Reconstitute TVP in boiling water. Simmer TVP, and all the ingredients to
blend.
