Apple Spice Muffins
this is from a book by Robert Kowalski on reducing cholesteral in kids.
Sorry, but I don't have the title at the tip of my fingers. This is the
only recipe I use from the book. It is obviously a few years old, from
the oat bran craze days.
2 1/4 cup oat bran
1 tablespoon baking powder
1 1/2 or 2 teaspoons cinnamon, vanilla and/or nutmeg if you like
2 egg whites or equivilent of 1 egg non fat egg stuff
3/4 cups apple juice concentrate
1/2 cup nonfat condensed milk ( I sometimes substitute regular nonfat
milk, works fine)
1 apple, cored and chopped
Mix together dry ingredients
mix together wet ingredients.
blend together
fill about 12 muffin cups, fill quite full, this stuff doesn't rise
much at all.
Bake at 350F for about 12 minutes. Do not over bake, will be dry.
Note: I don't use the paper liners cause the muffins stick to them and
you loose a lot of the muffin. I use a quick spray of Pam.
