This is my mother's recipe' for banana muffins, that I've modified to
be low-fat.
BANANA MUFFINS
3/4 cup suger
1 1/4 cup flour
3/4 tsp baking soda
1 tsp salt
1 egg equivalent (I use Egg Beaters--try egg whites if you feel like it)
2 or 3 mashed bananas (extra-ripe ones mash easier)
The ususal: mix the dry ingredients, then mix in the wet ones. Bake
at 350 for about 20 minutes.
