Blueberry muffins
1 1/4 cups evaporated skim milk (or rice or soy)
2 egg whites
3 tablespoons light corn syrup
1/2 cup granulated sugar
3/4 cup blueberries
2 1/4 cups oat bran
1 tablespoon baking powder
Preheat oven to 350F. Mix milk, egg whites, corn syrup and sugar.
In a large bowl combine oat bran and baking powder, then stir in the
blueberries. (this coats the berries and prevents them from staining
the muffins with juice).
Add moist mixture and blend gently. Line a muffin tin with paper muffin
cups and fill cups with batter. Bake for 17 minutes.
Note: IMHO, the muffins stick terrible to the paper, I prefer to spray
nonstick pans with a LIGHT spray of Pam.
These don't rise much, fill the tinie nearly full. Don't over bake,
they will be dry.
