These came out very good and are from Ornish's Everyday Cooking.
BLUEBERRY muffins
MAKES 12 MUFFINS
1 cup whole wheat flour
1 cup unbleached all-purpose flour
3 tablespoons sugar
I tablespoon baking powder
1/2 teaspoon salt
1/2 teaspoon ground nutmeg
1/2 teaspoon ground cinnamon
1/4 cup liquid egg substitute or 2 egg whites
1 cup nonfat milk
1/4 cup unsweetened applesauce
1 teas. vanilla extract
1/2 cup blueberries
Topping:
1 tablespoon sugar
1/2 teaspoon ground cinnamon
Combine dry ingredients. Combine wet ingredients. Add wet ingred to dry.
Stir in blueberries. Spoon into muffin pans. Sprinkle with topping.
Bake 375 degrees about 15 minutes. Cool in pan 5 min, then remove and
serve warm.
