I use this recipe for lowfat bran muffins, slightly modified, from the
Nabisco company (I think it actually was printed on a cents-off coupon).
I double the recipe and freeze the muffins, then take them to work for
breakfast--they're defrosted by the time I'm ready to eat them.
The applesauce substitutes here for added fat. The resulting muffin is
quite moist--one of the better bran muffin recipes I've tried, and
definitely the lowest fat. The original recipe says there is 2 g fat and
120 calories per muffin, but it uses 2% milk, only white flour, and no
dried fruit, so these are probably a bit less fat but somewhat more
caloric.
Low Fat Bran Muffins
1/2 cup whole wheat flour
1/2 cup all-purpose flour
2 tsp baking powder
1/2 tsp baking soda
1/2 tsp cinnamon
2 cups 100% bran
1-1/4 cups skim milk
1/3 cup firmly packed brown sugar
1 egg white
1/2 cup applesauce
1/2 cup dried cranberries
Heat oven to 400 F. Mix flour, baking powder, baking soda and cinnamon in
large bowl. Mix cereal, milk and sugar in another bowl; let stand 5
minutes. Stir in egg and applesauce. Add to flour mixture; stir just
until moistened. (Batter will be lumpy). Spoon batter into muffin pan
lined with foil cups, filling each cup 2/3 full. Bake for 18 to 20 minutes
or until browned. Makes 12.
