I like to make these bran muffins using craisins as the fruit. I like the
tartness of craisins.

Amount Measure Ingredient -- Preparation Method

2 cups oat bran
1/4 cup brown sugar, packed
2 teaspoons baking powder
1/2 teaspoon salt
1 cup skim milk
1/4 cup egg beaters=AE 99% egg substitute -- slightly beaten
1/4 cup molasses
2 Tbsp applesauce -- or prune puree
1 cup raisins -- or any fruit *
* (raisins,craisins, blueberries, apricots, etc.)
(Note: if using 'juicy' fruits like berries, decrease applesauce to 1
Tbsp, unless you like *really* moist muffins!)
Heat oven to 425 degrees. Line 12 medium muffin cups with paper baking
cups, or spray bottoms with Pam. Combine dry ingredients; mix well.
Add combined milk, Egg Beaters, applesauce, and molasses; mix just until
dry ingredients are moistened. Add fruit. Fill prepared muffin cups 3/4
full. Bake 15 to 17 minutes, or until golden brown.
