I made some yummy muffins on the weekend, after hearing a kind-of recipe.
I think you could do all kinds of things with this!

Fruit Muffins

- 1 cup dried fruit (I used a combination of sultanas, and some dried fruit
medley (apricots, peaches, apples, pears etc) chopped fine
- 2 cups tea (I used 2 Apple Cinnamon Herbal teabags, but regular tea would
be fine)
- 2 cups self-raising flour

Make the tea with boiling water, add the dried fruit to soak and leave
until lukewarm.
Add flour, stir until just mixed.  Place in 12 muffin tins and bake in a
hot oven.

These were so easy and very yummy, even without any added sugar (although
of course the dried fruit is full of sugar!).  They are very fruity and
delicious, and I think that you could get adventurous with adding things
like mashed banana, apple puree, other fruit like blueberries or whatever
is in season for you (they're always expensive down here so if I buy fresh
berries I wouldn't waste them by cooking them!).  You could try using
different teas - some of the herbal ones are really yummy (although I don't
think I could stomach mint tea in muffins).
