I was in the mood tonight to try a new recipe, wanted something simple, and
some type of pasta and some beans were appealing. I found this recipe and
we enjoyed the results. I used more barbecue sauce than the recipe called
for.

Barbecued Black Beans Over Elbows

3 cups elbow macaroni
32 ounces black beans, canned -- drained and rinsed
4 ounces chopped green chilies
14 ounces chopped tomatoes
(14-16oz), with juice
10 ounces frozen corn kernels -- thawed
2 tablespoons barbecue sauce
3/4 teaspoon ground cumin
salt and pepper
chopped fresh cilantro -- for garnish
minced fresh jalapeno pepper -- for garnish
Bring water to a boil and cook pasta. Meanwhile simmer beans in a saucepan
with the remaining ingredients. When pasta is done spoon in bowls, ladle
beans over top and garnish with cilantro and hot pepper. Copyright, 1997,
