Pasta e Fagioli (Serves 2 - 3)
12 oz. macaroni
1 small onion, chopped
2 small cloves garlic, crushed
1 15.5 oz. can pinto beans, drained
2 cups tomato sauce
2 tsp. dried basil
1 Tbsp. dried parsley
2 Tbsp. imitation bacon bits (Bac-Os), optional
ground pepper to taste
1. Cook macaroni in lightly salted boiling water until just tender.
2. Meanwhile, saute the onion and garlic in a saucepan for about 3
minutes.
3. Add the beans, tomato sauce, basil and parsley. Bring to a boil,
then lower heat and simmer, uncovered, for about 5 minutes.
4. Drain the macaroni and add it to the saucepan, along with imitation
bacon bits and pepper to taste. Mix well and cook for a couple of
minutes longer.
