Pasta e Fagioli
1 onion, chopped
3 to 6 cloves garlic, minced (depending on how much garlic you
like)
2 teaspoons dried rosemary
2 - 16 oz cans of great northern beans, with liquid
(or 1/2 cup dried beans, soaked and cooked)
2 cups dried pasta (such as gnocchi), cooked al dente and drained
1 cup vegetable stock
2 Tablespoons tomato paste
salt and black pepper to taste
Cook onion, garlic and rosemary in 1/3 cup water until onions are
soft. Add beans, pasta, stock and tomato paste and bring to a
boil (you may need to add water). Reduce heat and simmer for 30
minutes. Add salt and plenty of freshly ground black pepper to
taste.
